These banana muffins are one of our family’s favourite, I hope they can be one of yours too!

Banana Muffins
Description
Moist, fluffy, perfect with a cuppa!

Ingredients
- 3 bananas, mashed
- 3/4 cup sugar
- 1 egg
- 1/3 cup butter, melted (or vegetable oil)
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup chocolate chips (optional)
Instructions
- Pre-heat oven to 180°C
- Cream together banana’s and sugar
- Add the rest of the wet ingredients, egg, butter, vanilla extract (and chocolate chips), and mix really well
- Sift in flour, baking powder and salt
- Mix lightly
- Spoon mixture into muffin tray
- Bake for 25-30mins
- Remove from oven and allow to cool for 10mins then transfer to cooling rack to finish cooling
- Eat all of them in 5 mins (share if you must) or they keep very well in a sealed tupperware in the pantry
