Banana Muffins

Moist, fluffy, perfect with a cuppa!



  • 3 bananas, mashed
  • 3/4 cup sugar
  • 1 egg
  • 1/3 cup butter, melted (or vegetable oil)
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup chocolate chips (optional)


  1. Pre-heat oven to 180°C
  2. Cream together banana’s and sugar
  3. Add the rest of the wet ingredients, egg, butter, vanilla extract (and chocolate chips), and mix really well
  4. Sift in flour, baking powder and salt
  5. Mix lightly
  6. Spoon mixture into muffin tray
  7. Bake for 25-30mins
  8. Remove from oven and allow to cool for 10mins then transfer to cooling rack to finish cooling
  9. Eat all of them in 5 mins (share if you must) or they keep very well in a sealed tupperware in the pantry
