Creamy Leek Spaghetti

Description

This meal is ready in the time it takes to cook the pasta, which is always my kind of meal! Its restaurant quality taste and versatile to boot. You can add tinned/fresh mushrooms or a few carrots, a couple of slices of bacon, whatever your supplies will allow! But be rest assured, this is delicious ‘as is’! You can even leave out the eggs for a vegan version.

Ingredients

  • 3 leeks
  • 2 Tbsp olive oil
  • 2 garlic cloves
  • 1 stock cube
  • 1/2 tsp Italian herb mix
  • 1/2 tsp pepper
  • 2 eggs
  • 500ml milk of choice, I use almond for this one
  • Spaghetti or tagliatelle pasta

Instructions

  1. Get your pasta cooking pot ready and heating on the stove, I like to also add a splash of olive oil for good luck and other anti sticking reasons
  2. Decapitate your leeks down to the sweet white stuff, I leave a touch of green too, it just feels so wrong throwing so much away! Slice them up into .4-.5cm slices, get the ruler out
  3. Peel and dice your garlic
  4. Chuck all that into a pot with the olive oil and saute for about 5 min
  5. Crumble in stock cube and add herbs and pepper, stir through and leave for another 2 mins
  6. By this point you might want to check your pasta water and if it’s boiling, get your spaghetti in to cook and set your timer for 10 mins
  7. Add the milk to the leeks, stir and leave to simmer, stir again and then cover and leave to do it’s thang
  8. Whisk two eggs in a mug or jug, or whatever you’ve got handy
  9. Once your timer goes off, test your pasta to see if an Italian would be satisfied, if it is 👌, switch all the knobs on your stove off, including the creamy leeks, and take the lid off it too
  10. Scoop out about 1 cup of pasta water and pour this in to your whisked eggs stirring like a mad person as you pour, set aside while you drain your pasta
  11. Back to the eggs, pour them slowly into the creamy leeks while stirring it through beautifully
  12. Stir everything nicely for 30 seconds or so to get the eggs combined and cooked with the residual heat
  13. Combine pasta with creamy leeks, you can either chuck all the spaghetti into the the creamy leeks pot, or vice versa, and stir through, or dish up the pasta and then spoon your creamy leeks on top, your preference!
  14. Voila! A super tasty pasta dish ready in minutes!
  15. Serve to your loved ones/house mates and wait for the moans of approval
