Oh this one is good, we love it, kids love it! I love it because it’s just chuck in a pot and then a few minutes later, serve! My husband loves it because, less dishes! (And I am the dishes Queen!) And kids love it because you know, pasta.

Ingredients
- 1 onion
- 2 garlic cloves
- 4 Tbsp olive oil
- Spice mix: 1 tsp basil, 1 tsp ground corriander, 1 tsp parsley, 1/2 tsp marjoram, 1/4 tsp ginger, 1 tsp black pepper
- 1 stock cube
- 1 tin mixed veg or 2 cups frozen or fresh mixed veg
- 3 Tbsp tomato paste
- 2 Tbsp balsamic vinegar
- 2 tins tomatoes
- 4 hand fulls spinach
- 4 cups water
- 400g pasta of choice
Instructions
- Peel and dice your onion and garlic
- Add this to a deep pot with the olive oil and saute for 5 mins
- Add the spices and crumble in the stock cube, give everything a stir
- Add in the tinned tomato, the veg, the tomato paste, and the balsamic vinegar
- I fill up the 2 tins, from the tinned tomato, with water and add that too
- Pour the pasta straight into the pot, mix everything around really well
- Bring to a boil, once boiling, add your spinach and set a timer for (roughly) 12 minutes, keep the lid off and stir occasionally, add more water if you have too
- Cook until the pasta is to your liking and most of the liquid has evaporated
- Ding, ding, ding, dinner is ready!
