Quick Butternut, Courgette & Tomato Stew
You can have this versatile meal on the table in 30mins! Pair with pasta, rice or couscous.
Servings: 4 people
Ingredients
- 1/2 butternut squash
- 1 courgette
- 2 cloves garlic
- 2 Tbsp olive oil
- 1/2 tsp basil
- 1/2 tsp oregano or marjoram
- 1/2 tsp ground coriander
- 1/2 tsp parsley
- 1/4 tsp ginger
- 1/4 tsp black pepper
- 1 stock cube
- 1 tin tomatoes
- 1 cup water
- 2 Tbsp tomato paste
- 2/3 cup milk any milk of your choice, I use Almond
Instructions
- Peal and dice butternut
- Dice courgette & garlic
- Add olive oil to pot and add all the veggies
- Add spices and crumble in stock cube
- Stir it all together and simmer for 5 mins
- Add tinned tomatoes, water, and tomato paste
- Bring to boil and simmer for 20mins
- While that cooks through, cook your rice, couscous or pasta
- Once the butternut is soft add the milk, stir through and allow to come to a boil again
- It's ready!
