Quick Butternut, Courgette & Tomato Stew

Description

You can have this versatile meal on the table in 30mins! Pair with pasta, rice or couscous.

Ingredients

  • 1/2 butternut squash
  • 1 courgette
  • 2 cloves garlic
  • 2 Tbsp olive oil
  • 1/2 tsp basil
  • 1/2 tsp oregano or marjoram
  • 1/2 tsp ground coriander
  • 1/2 tsp parsley
  • 1/4 tsp ginger
  • 1/4 tsp black pepper
  • 1 stock cube
  • 1 tin tomatoes
  • 1 cup water
  • 2 Tbsp tomato paste
  • 2/3 cup milk (any milk of your choice, I use Almond)

Instructions

  1. Peal and dice butternut
  2. Dice courgette & garlic
  3. Add olive oil to pot and add all the veggies
  4. Add spices and crumble in stock cube
  5. Stir it all together and simmer for 5 mins
  6. Add tinned tomatoes, water, and tomato paste
  7. Bring to boil and simmer for 20mins
  8. While that cooks through, cook your rice, couscous or pasta
  9. Once the butternut is soft add the milk, stir through and allow to come to a boil again
  10. It’s ready!
